Rum and Coca-Kahlua Popsicles

I checked into a hotel in Nashville the other day, & before I gave my car to the valet, I noticed the temperature on my dashboard said “115 degrees.”  Holy smokes. It’s hot folks!  This week’s blogs are all about staying cool, quenching thirst, and having fun during 4th of July week!

Since so many folks enjoyed my “Salted Margarita Popsicles” last week, I decided to release another one! If you’re looking for a refreshing pick-me-up in the hot weather, a mixed drink called Rum & Coke, might actually put you to sleep if you drink it too fast. This popsicle recipe has a unique little twist and will help you slow down &  savor it!  You only need 3 ingredients.

Cola: This could be Coca-Cola, Coke Zero (if you’re watching sugar), Cherry Coke, Vanilla Coke, off-brand colas……..

Coffee Flavored Liquor: Brand names include Kona Gold, Kahlua, Tia Maria, …. ask the clerk if you’re lost.

Rum:  ’Doesn’t really matter if it’s dark, light, …. Although you might get to lookin’ & see a flavored rum that would go well with this.

 

“Rum & Coca-Kahlua Popsicles”

2 Cups Cola

1/4 Cup Coffee Flavored Liquor

1/4 Cup Rum

Mix ingredients together & pour in popsicle molds.  Freeze.  Savor!

I used Coke Zero to eliminate extra sugar & calories…..

It will freeze a little better if the Coke is flat. I stirred it really well & put it in the fridge uncovered for a while to let some of the fizz out.
