I recently sampled Trader Joe’s Curried Chicken Salad, and I LOVED IT! It curbed a nighttime salt craving with a little sweetness and spice that made it even better!  I don’t live near a Trader Joe’s just yet, so I was anxious to examine the ingredients to see if I could re-create this concoction in a cheap and easy way!  (I’m not kidding – I was dog-tired at the end of the day, so easy was as equally important as tasty.)
