This has been the neatest blog project!  A reader asked for some ideas for a full-fledged fall flavored salad to go with the Pumpkin Apple Spice Vinaigrette I blogged about a few weeks ago, and I had some pretty cool discoveries! I never thought cafeteria food anywhere could make me this happy.  Hospital food, school food, …. never have I had such a smile on my face in regards to food on a plastic sectioned tray until yesterday.  In honor of Breast Cancer Awareness Month, I had the opportunity to eat a ham & swiss wrap secured with a PINK TORTILLA and a chocolate cookie with pink M&M’s in it to match! I see pink often these days, but I think today, this out-of-the-ordinary pink treat reminded me about monthly checks, friends who need reminders, and strong women friends who have fought this battle.  If you don’t get to enjoy something as crazy as a pink tortilla – - remember anyway.  Do what you can to remember & be aware of this senseless disease....

In a quest to eat healthier, I have added more salads to my repertoire at home.  You’d be surprised how difficult it can be to make a tasty salad that isn’t loaded down with hidden fat.  The other day someone told me they LOVED this black and bleu salad….. but it had 21 grams of fat & was really a piece of steak & a cup or so of bleu cheese…. atop a layer of green lettuce! When fall gets here, I go into “pumpkin mode,” trying everything that claims to have a pumpkin or pumpkin spice flavor.  Coffee creamer and hot tea are always in my autumnal ritual, but I’ve found pumpkin in tons of different concoctions over the past few years! I have even had pumpkin spice lotion in my bathroom.  Godiva makes Pumpkin Spice truffles that are dusted with cocoa, and pumpkin spice ice cream with Heath mixed in @ my local creamery is a must!  It doesn’t stop there…..Bless his heart – as of yesterday, my dog is eating a new variety of dog food that contains pumpkin & sweet potato!
