Autumn is the Perfect Time for Making Whoopie!

Whoopie Pies are a fun and tasty treat no matter what time of the year.  Recently, I was given a scrumptious pumpkin spice whoopie pie & it knocked my socks off!   This recipe below can be tweaked & flavored any way you want!  It also utilizes the cake mix, so you don’t have to spend a lot of time or do a lot of dishes!  🙂

 

 

 

 

 

The Cake:

1 Box of Cake Mix w/pudding in the mix (whatever flavor!)
3 Eggs
1/2 cup Water
1/2 cup oil

Mix. Drop 2 TBS of dough on greased or parchment covered cookie sheet – 2 inches apart.

Bake 8-10 min. until fluffy & toothpick comes out clean.

While cooling – make the filling.

The Filling:

1 brick of cream cheese (pick a low fat or neufatchel if you want!)

1 tub of cool whip, thawed

1 7 oz. jar of marshmallow cream

Flavoring: Get creative! 1 tsp of dry spice/flavor or 1 1/2 tsp liquid (ginger or cardamom would make a killer autumn concoction…..)

~Mix marshmallow cream & cream cheese well.  Mix in cool whip – but not on high – or for too long.

~When they are completely cooled – spoon a couple of tablespoons in between each half! Serve!

 

Flavor Combos Ideas:

Strawberry cake + lemon flavored creme

Chocolate Cake + mint flavored creme

Red Velvet + Vanilla flavored creme

Chocolate Cake + Vanilla/Cayenne (spicy!) flavored creme….

 

The Possibilities are ENDLESS!
