In a quest to eat healthier, I have added more salads to my repertoire at home.  You’d be surprised how difficult it can be to make a tasty salad that isn’t loaded down with hidden fat.  The other day someone told me they LOVED this black and bleu salad….. but it had 21 grams of fat & was really a piece of steak & a cup or so of bleu cheese…. atop a layer of green lettuce! Breakfast was an event at my house growing up.  I always ate breakfast at the table, and Momma always found a way to make it interesting – even if it was cereal.  This is one of the breakfasts we always ate when the weather was cool or downright freezing!  The sweet of the brown sugar & the salt of the bacon made a delicious meal that “sticks to your bones.”  Serve pipin’ hot with juice and a hot tea like Earl Grey or Irish Breakfast Tea….. comfort food! Whoopie Pies are a fun and tasty treat no matter what time of the year.  Recently, I was given a scrumptious pumpkin spice whoopie pie & it knocked my socks off!   This recipe below can be tweaked & flavored any way you want!  It also utilizes the cake mix, so you don’t have to spend a lot of time or do a lot of dishes!  :)           The Cake: 1 Box of Cake Mix w/pudding in the mix (whatever flavor!) 3 Eggs 1/2 cup Water 1/2 cup oil Mix. Drop 2 TBS of dough on greased or parchment covered cookie sheet – 2 inches apart. I love fall colors!  Mums are everywhere right now & the colors are brilliant this year!  I especially love flower arrangements this time of year (being an October baby…), because the reds, oranges, and yellows are so eye-catching! Some of my favorites over the years have been  Yellow & Red  “fiery” Roses, tiny currants, orange holly, mums, and tiny orange rosebuds.  Not only do buds give a lot of contrast to the bouquet, they also can be fun to watch for a little while after you get your bouquet! When fall gets here, I go into “pumpkin mode,” trying everything that claims to have a pumpkin or pumpkin spice flavor.  Coffee creamer and hot tea are always in my autumnal ritual, but I’ve found pumpkin in tons of different concoctions over the past few years! I have even had pumpkin spice lotion in my bathroom.  Godiva makes Pumpkin Spice truffles that are dusted with cocoa, and pumpkin spice ice cream with Heath mixed in @ my local creamery is a must!  It doesn’t stop there…..Bless his heart – as of yesterday, my dog is eating a new variety of dog food that contains pumpkin & sweet potato!
